 What: Red Velvet Pancakes, Sweet Kale, Strawberries, Blueberries

Red velvet pancakes seemed to be the go-to guilty pleasure during Valentine's Week, but after numerous cupcakes and cookies and brownies and chocolate, red velvet needed an epicurean makeover in order for me to actually consume any more of it. Luckily, there was kale, and having never tried it before, I figured it couldn't be awful with pancakes and triple helpings of syrup. All things considered, sweet kale salad is infinitely better than any old romaine or iceberg variety. Queen Bey's on to something there.

What: Chipotle Kale Tacos (Vegetarian/Chicken & Steak)

As blindly carnivorous as I am, the idea of kale (or any hyped-up superfood) used to effect a grimace of disgust, and less-than-surreptitious shuffling over to the chicken kebab trays. Then came the cult of Chipotle, and, well, you know the rest. So what better way to celebrate Chipotle (and conscious healthiness) at home than by throwing some Chipotle ingredients on some kale in an aesthetically sophisticated manner?  From its color to its texture to its ridiculous health benefits, it doesn't have to be a cardboard-masticating struggle to live well and eat deliciously. Take it from this rampaging carnivore.
